Tamarind Gum

Tamarind pods are the fruits of the tamarind tree, which is native to the subtropics. In India, it grows along streets or on plantations.

The pulp is used in Indian cooking. The seeds are shelled using a thermal process and are then sorted by hand. A milling process is used to create tamarind gum. Tamarind gum contains a galactoxyloglucan as a polysaccharide.
