Ghatti is obtained from the Indian subcontinent's native tree of the species Anogeissus latifolia. These trees can be found in the dry deciduous forests. In particular, oozing out of the exudate takes place under extreme climatic conditions. The noodles are very slow to ooze out of the tree, and this process may take several days depending on the age of the tree.
The locals collect the leaked ghatti. They are familiar with the different trees, allowing them to identify the right trees. The goods are then sold to dealers, who classify and package them according to different qualities.
