Tragacanth is the dried exudate from the root of wild shrubs of the genus Astragalus, mainly Astragalus gummifer Labillariere. The bushy, thorny plant grows in Turkey and middle East. Harvest takes place during the dry summer months. Each plant only allows for a harvest of a mere few grams per year. A few days after tapping the root, the leaking tragacanth is collected by villagers of each respective region and sold to dealers. Next, the tragacanth is sorted according to color and quality and packaged.
