Tara pods are the fruits of the tara tree, which is native mainly to the Peruvian Andes. Both the seeds and the pulp are used for industrial purposes.

Tannins and other components are extracted from the pulp. The endosperms (splits) from the seeds are isolated; then milling is used to create tara gum.

Polysaccharide is a galactomannan. In terms of its chemistry and applications, it has properties that are similar to both guar gum and carob bean gum.
